Salmon Burgers

Makes 3 burgers

Ingredients

1 7.5 oz (210 gram) tin salmon, drained, skin and bones removed
1/2 tbsp minced fresh ginger root (or 1/4 tsp ground ginger)
1/2 tsp hot sauce (optional)
2 green onions, thinly sliced
2 tsp lemon juice
1 tsp light soy sauce
1/3 cup oats
1 egg, lightly beaten

Instructions

Mix all ingredients in a medium bowl. Divide mixture into 3 equal portions. Shape into 1/2 inch thick patties. Refrigerate at least 20 minutes before cooking (be sure to cover well, and protect things in the fridge from contamination!).

Spray a large skillet with cooking spray. Heat over medium heat. Add salmon patties and cook until golden brown, about 5-6 minutes total (make sure internal temperature reads 145 degrees farenheit - use an instant read thermometer placed through the meat lengthwise).
