Deluxe Salad with Chickpeas
Main ingredients
chickpeas (2.5 cups cooked; or 1.25 cup raw, cooked) fusilli (300 grams dry measure, cooked) 1 large english cucumber, sliced 2 medium tomatoes, chopped 1 large red (or green) bell pepper, chopped
Vinagrette Ingredients
1/3 cup olive oil 1/2 cup red wine vinegar 1 tsp crushed dried oregano, or 1/4 tsp ground oregano 1/4 tsp dry mustard 1 clove garlic, minced; or 1/8 tsp garlic powder 1/8 tsp black pepper
Instructions
Whisk together vinagrette ingredients in a small bowl. Toss main ingredients with vinagrette in a large bowl. Serve over a bed of baby spinach leaves.
