Roast Beef
Ingredients
One 2-5 lb roast (round or sirloin cuts)
Rub per 2 lbs:
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tsp italian seasoning
Instructions
Sear roast in nonstick frying pan just until all sides are brown.
Move to a roasting pan with rack. Wait approx. 5 min for roast to cool.
Rub roast with olive oil. Stir together seasonings (including garlic) and rub into roast. Do NOT cover the roast, do NOT add any water or liquid.
Roast in a 325 degree oven according to a roasting chart and until the thermometer registers the "final roasting temperature". This will be 5 to 10 degrees below the "final doneness temperature". Remove the roast from the oven; cover with foil and let stand for 15 minutes before carving. The meat's temperature will rise 5 to 10 degrees during the time it stands.
Ie. a medium rare roast is 145 degrees when it is done cooking. You would take it out when it reaches 135 to 140 degrees.
