Pasta With Tomato Sauce

Ingredients

1/2 cup chopped onion (1 small)
1/2 red bell pepper chopped
1 clove garlic
1 tbsp olive oil
28 oz can diced tomatoes
6 oz can tomato paste
2 tbsp snipped fresh parsley (or 2 tsp dried parsley)
1 tbsp snipped fresh basil (or 1 tsp dried basil)
1 tbsp snipped fresh oregano (or 1 tsp dried oregano, or 1/4 tsp ground oregano)
1 tsp sugar
1/4 tsp black pepper
8 oz spaghetti or other pasta

Instructions

1. In a large skillet, cook onion, sweet pepper, and garlic in hot oil until vegetables are tender.

2. Stir in 1/3 c water, tomatoes, tomato paste, herbs, spices and sugar. Bring to boiling, reduce heat. Simmer covered for 30 minutes. Uncover, simmer for 10-15 minutes more or to desired consistency, stirring occasionally.

3. Meanwhile, cook 8 oz of spaghetti or other pasta.
