Meatloaf
Ingredients
2 beaten eggs
3/4 cup skim milk
1/2 cup oats (quick or instant)
1/4 cup finely chopped onion
2 tbsp fresh snipped parsley (or 1 tsp dried parsley)
1 tsp salt
1/8 tsp black pepper
1/2 tsp dried oregano, crushed (or 1/8 tsp ground oregano)
1.5 lbs ground beef sirloin (or ground round steak)
1/2 cup salsa
Instructions
1. In a bowl combine eggs, milk, oats, onion and seasonings. Add meat and mix well. Lightly pat mixture into an 8x4x2-inch loaf pan.
2. Bake at 350 degrees for 1 hour 15 min (check temperature and leave in until the internal temperature is 160 F).
3. Take out and spoon fat off top. Spread salsa over top of loaf. Put back in oven for 10 minutes more. Let stand for 10 minutes before serving.
