Basic Chicken Marinade

Yield: marinade for 1 kg skinless boneless chicken breasts

 

Ingredients

1/4 cup olive oil
2 tbsp soy sauce (40% less salt)
2 tbsp worcestershire sauce
3 tbsp red wine vinegar
1 tbsp lemon juice
1.5 tsp dry mustard
1/2 tsp black pepper

Instructions

Whisk (I use a fork) together, pour into ziplock bag with chicken. Should completely submerge chicken so you don't have to flip it. Allow to marinate in the fridge for 6 to 12 hours.

I cook chicken on rack in broil pan. Put oven to broil, wait 10 min, put chicken in and cook for 10-14 min per side. Chicken should be 175 degrees - to check put an instant read thermometer through the chicken lengthwise. The ones I cook take 12 min per side.

I count the calories as 1 tsp olive oil.

Easy cleanup tip: it helps to line the broil pan with foil under the rack.
