Jamaican Jerk Spice

Yield: enough for 3 lbs of skinless boneless chicken breast  

 

Combine

2 tsp sugar or splenda
1.5 tsp onion powder
1.5 tsp dried thyme, crushed (or .5 tsp ground thyme)
1 tsp ground allspice
1 tsp black pepper (ground)
1 tsp paprika
1/2 tsp salt
1/4 tsp ground nutmeg
1/8 tsp ground cloves

First oil the outside of the meat with olive oil. Then sprinkle mixture evenly over pork, chicken, or seafood; rub in with fingers (I use a fork to rub it in..)

OR You can make it in bulk by combining the following in a spice bottle, closing it, and shaking

2 tbsp sugar or splenda
1 tbsp + 1.5 tsp onion powder
1 tbsp + 1.5 tsp dried thyme, crushed (or 1.5 tsp ground thyme)
1 tbsp ground allspice
1 tbsp black pepper (ground)
1 tbsp paprika
1.5 tsp salt
1 tsp ground nutmeg
.5 tsp ground cloves
