Banana Raisin Oat Muffins
Ingredients
1 cup white flour (or whole wheat)
1/2 cup ground oats (use blender to grind)
1 cup oats
1/2 cup splenda
1/2 tsp cinnamon
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/4 cup oil
1 beaten egg
1/2 cup applesauce
3/4 cup skim milk
1/2 tsp vanilla
2/3 cup raisins
1 cup mashed bananas (approx. 2 med)
Instructions
Mix the dry ingredients in a large bowl. Mix the rest of the ingredients in a medium bowl. Then pour into dry ingredient mixture, and stir until just combined.
Put into 12 muffin cups (they will be full). Cook at 350 degrees for 30 minutes. Cool on a rack. Store in the fridge (or they will go bad).
