Adobo Rubbed Pork Tenderloin

Ingredients

3 tbsp paprika
1 tbsp black pepper
1 tbsp salt
1.5 tsp chili powder
1 tbsp brown sugar
2 pinches cayenne pepper
12 oz pork tenderloin, trimmed of fat, cut into 3 or 4 oz pieces

Instructions

Heat oven to 350. Mix spices in bowl. Rub both sides of pork with spice mixture thoroughly.

Heat an oven safe skillet over medium-high heat and pan-sear (dry pan) each piece of pork on both sides until golden brown. Transfer pan to oven until pork is completely done, about 8-12 min per inch of thickness (I usually check it at 20 minutes). Take out when pork has reached 160 degrees or is medium-well done.

3 oz pieces:

153 calories, 4 g fat, 3 g carbs, 24 g protein

4 oz pieces:

203 calories, 5 g fat, 4 g carbs, 32 g protein

Serving Suggestion

Serve with Black Bean Pico de Gallo, fat free sour cream and corn.
